Nestled within the misty embrace of tradition, Doña Nubia Loaiza tends to the Santa Fé estate, a sanctuary steeped in the legacy of her coffee farming lineage. Over 37 hectares in Pijao, Quindio, her ancestral home stands tall at 1850 meters above sea level, sheltered by ancient shade trees—Guamo, Chachafruto, and Cedro.

Following her father's passing, Doña Nubia and her mother assumed stewardship of the land. In 2018, seeking to breathe new life into Santa Fé, she transformed it into a boutique hotel, welcoming guests to immerse themselves in the essence of coffee culture amidst her plantation.

With meticulous care, Doña tends to Castillo and Yellow Caturra, favouring the washed processing method to preserve flavour purity, though weather permitting, she dabbles in Naturals and Honeys. Yet, the spectre of climate change casts a subtle shadow, diminishing yields year by year.

Undeterred, Doña Nubia finds solace in community support. Grateful for the recognition her coffees receive, she eagerly explores experimental processing methods, embracing adaptation and evolution in harmony with her beloved coffee farm.
