Atilano Giraldo is the cultivator behind this coffee, which thrives on the El Palmichal estate. The process begins with a stringent adherence to the harvesting of cherries when they reach optimum ripeness. These cherries are subjected to a thorough examination, meticulously floated and hand-sorted to eliminate any imperfections. Following this, the cherries undergo an immersive 30-hour underwater fermentation before they are pulped. The parchment-covered beans are gently washed and then meticulously dried under controlled temperature conditions until they attain the ideal moisture level.
This particular coffee is a micro-lot comprised entirely of the Tabi variety, an innovative creation by the "Federacion Nacional de Cafeteros." Tabi is a unique hybrid, a result of combining the genetic traits of the Timor Hybrid, Bourbon, and Typica.
