In the high country above La Paz, Felipe Guarachi Tola works Finca Chuquiago at 1,550 metres, the farm named for Chuquiago Marka, the Aymara word for this land long before the city took its place.\u003c\/p\u003e\n\u003cp\u003eThe tree is Java, and it does not belong here. An Ethiopian landrace carried first to the island that gave it its name, then to Cameroon, and only reaching South America in the last breath of the twentieth century, it is a wanderer that arrived in Bolivia almost by accident. Tall, late to ripen and shy in yield, it is grown by few and mastered by fewer. To find it raised by a single producer in a near-forgotten origin is to hold two rarities in the one bag.\u003c\/p\u003e\n\u003cp\u003eGuarachi Tola renders it in the traditional washed method. Ripe cherry is depulped, fermented under careful watch, then washed clean to the parchment and dried slow until the clarity sets and holds. The washed road grants no cover.
