Shady and his brother Elias took over El Vergel and decided to convert a portion of their vegetable farm to grow coffee. They introduced Geisha and Java varietal into the farm and began to experiment with various processing methods to create unique coffee profiles.
This microlot is grown near the washing station, surrounded by Guava trees. This coffee boasts a notably intense and fruity flavour, making it stand out among the estate's offerings. Planted in 2016 and 2018, with more than 40,000 plants in this lot, it has proven to be an excellent choice for experimenting with larger processing batches.
The estate uses a particular method for this lot, involving a special two-step anaerobic fermentation to enhance the flavour, resulting in a more intense yet clean profile that showcases the variety's attributes. This unique flavour from the process is then achieved through sun-drying, lasting 15 to 25 days.
