Finca Calahute sits above San Pedro Necta in Huehuetenango, Guatemala, held by third generation producer Alfonso Anzueto, whose move toward separated lots has sharpened a 226 hectare estate in a district built on smallholdings.
This Maragogype plot was planted around 30 years ago from Salvadoran seed, a rare Typica mutation seldom held in volume. Hand sorted, fermented 24 to 36 hours and patio dried under shade through the heat of the day to preserve its scale and weight.
