Blood Blossom is grown by smallholders of the Gingo Bedesa district in Ethiopia's West Guji Zone and processed at the Tadesse Desta Buku Saysa dry mill. Heirloom varieties are dried as a natural at 2,200 to 2,300 MASL, giving blueberry, peach and vanilla.
Ethiopian heirloom denotes the thousands of indigenous landrace varieties that grow, often wild or semi-wild, across the country's forests and gardens. This genetic depth is the source of Ethiopia's signature floral and citrus complexity.
In the natural process, whole cherry is dried intact so the bean steeps in its own fruit. Done with discipline it builds heavy sweetness, body and pronounced berry character, with no shortcuts at the drying stage.
Ethiopia is the birthplace of Arabica, and its forests hold a genetic diversity found nowhere else. Smallholder gardens at extreme altitude give the floral, citric, tea-like cups the country is known for.
