Drawn from the slopes of Gunung Tilu in Pangalengan, this lot is assembled through a network of smallholder producers operating across West Java. The terrain is dense, humid, and volatile, where altitude and climate slow maturation and concentrate sugars within the fruit. Each contribution feeds into a broader collective, where structure is imposed through centralised processing and controlled drying.
Processing is overseen by Natcha Coffee, a group focused on experimental methodology and precision-driven fermentation. While this lot presents as a Natural, the underlying approach reflects a shift away from traditional Indonesian profiles, favouring clarity, saturation, and defined fruit expression.
Cherries are harvested at peak ripeness before undergoing extended drying across raised systems and covered environments. The process is calibrated to retain fruit integrity while avoiding instability, resulting in a profile that carries both density and lift. The final structure is deliberate, with sweetness held in tension against a clean, wine-like acidity.
This is not a conventional Indonesian cup. It is a recalibration of origin, where traditional terrain is pushed through controlled process to produce something more vivid, more composed, and more exacting in the cup.
