Empyreal Decay is produced by Edilberto Vergara at Las Flores, in San Isidro, Acevedo, in Colombia's Huila department. Pink Bourbon is washed at 1,750 to 1,800 MASL, giving yuzu, orange blossom and bergamot.
Pink Bourbon is a rare spontaneous cross expressing pink cherry. Concentrated in Huila, it is celebrated for floral aromatics, stone fruit and a silky, layered sweetness.
In the washed process, cherry is pulped and the remaining mucilage fermented and rinsed away before drying. Stripping the fruit early lets the bean's intrinsic acidity and clarity speak, the cleanest expression of a varietal and its origin.
Colombia's combination of high Andean altitude, volcanic soil and two flowerings a year makes it one of the most consistent specialty origins on earth, with a deep bench of growers pushing varietal and process innovation.
