Exhumed From Flaming Stars is grown and produced by indigenous growers of La Cooperativa de Cafes Especiales de Narino, in the Aponte district of Narino, Colombia. Castillo is honey processed at 1,700 to 2,000 MASL, yielding guava, grapefruit and caramel.
Castillo is a Colombian-bred hybrid released by Cenicafe for leaf-rust resistance. Hardy and high-yielding, modern selections cup cleanly with balanced sweetness.
In honey processing the skin is removed but some sticky mucilage is left on the bean during drying. The result sits between washed and natural, rounded sweetness with measured acidity.
Colombia's combination of high Andean altitude, volcanic soil and two flowerings a year makes it one of the most consistent specialty origins on earth, with a deep bench of growers pushing varietal and process innovation.
