Gnosis of Fire comes from Mei Zhao at the Xingang Coffee and Tea Estate in Menglian, Pu'er, in China's Yunnan province. The lot is Catimor T1575 taken through a controlled-fermentation natural at 1,400 to 1,800 MASL, yielding white chocolate, hazelnut and goji berry.
In the natural process, whole cherry is dried intact so the bean steeps in its own fruit. Done with discipline it builds heavy sweetness, body and pronounced berry character, with no shortcuts at the drying stage.
Yunnan in China's southwest has emerged as a serious specialty origin, its high subtropical plateau and modern processing turning out clean, sweet, increasingly refined coffees.
