Manifest Alchemy is a decaf produced by Oscar Hernandez at Los Nogales, in Bruselas, Pitalito, in Colombia's Huila department. Typica is grown at 1,750 MASL and decaffeinated by the mucilage EA method, which lifts the caffeine while preserving the cup's strawberry, lime and eucalyptus.
Typica is the other foundational Arabica, the lineage from which many varieties descend. Low-yielding but elegant, it gives a clean, sweet, classic cup.
Ethyl-acetate decaffeination uses a naturally derived solvent to remove caffeine while leaving the coffee's body and sweetness largely intact.
