SHRINE OF INVOLUTION is sourced from Aricha village in the Gedeo Zone, produced by a collective of approximately 800 smallholder farmers working at elevations between 1,900 - 2,100 MASL. This is highland terrain shaped by red clay soils, steady rainfall, and moderate temperatures, where altitude and microclimate govern maturation and density. Cultivation centres on Kerume and local heirloom varieties, preserving the genetic breadth that defines Ethiopian coffee.
Processing is natural, but executed with restraint and discipline. Upon arrival at the station, cherries undergo rigorous presorting, with only fully ripe fruit retained. Floating in water removes low-density material, ensuring structural integrity before drying begins. A controlled 12-hr soak follows, initiating internal sugar reactions prior to drying.
Drying is deliberate and slow. Cherries are spread in measured layers of approximately 25kg per bed, no more than five centimetres thick, across raised African drying tables. They are turned repeatedly each day to maintain even exposure. Over roughly 28 days, moisture is reduced to 11 - 12%, finalising stability without haste.
