Amid the misted slopes of San Adolfo in southern Huila, Mazatlán stands as the life’s work of Luz Helena Salazar. The farm rests among fertile volcanic soils at altitudes nearing 1,900 MASL, surrounded by native vegetation that shelters the cherries from harsh light and sustains the soil’s vitality. Every stage of cultivation is done with precision and restraint, the rhythm of harvest dictated by patience rather than haste.

Each Pink Bourbon cherry is hand-selected at peak ripeness, submerged in water to separate the light from the dense, and sorted again by hand to remove any imperfection. The fruit then undergoes thirty hours of underwater fermentation, a slow and controlled process that refines the structure of the cup and reveals its layered sweetness. After pulping, the parchment is washed gently and transferred to raised beds where temperature and airflow are monitored daily until the exact moisture balance is achieved.

Pink Bourbon itself remains a varietal shrouded in quiet intrigue. Originating in San Adolfo around 2,100 MASL, it is believed to have mutated naturally from Bourbon stock, though genetic studies now point toward Ethiopian descent. Its trees bear slender, pale-hued cherries that require isolation to prevent cross-pollination and exacting attention to harvest timing. The reward is a profile marked by high floral clarity, fruit nectar sweetness, and a clean, crystalline acidity that fades with the softness of honey.

Mazatlán’s harvest is small, each lot traceable to Luz Helena’s watchful care. What emerges is a coffee that embodies balance and devotion, shaped by highland air, mineral earth, and the human touch that transforms labour into ritual.
