Introducing our latest offering from Ethiopia, sourced from the vibrant heart of the Guji Zone in the Uraga district. This exceptional lot hails from the village of Harowachu, a community founded 14 years ago by Bisrat Melaku. Nestled in the high-altitude regions near Mount Quto and the Seboba River, this area provides an ideal setting for cultivating high quality coffee.
The harvest involves 40-60 local farmers and 400-500 pickers who meticulously handpick ripe cherries, delivering them to the Harsu Sala washing station. Here, the cherries undergo a thorough process: they are sorted by grade through density channels, fermented for 72 hours, washed, and inspected for defects. The final step involves drying on raised tables for 5-8 days, with careful monitoring to reach the perfect 11% moisture content.
The African raised beds, a testament to their dedication to excellence, are expertly crafted to ensure optimal airflow and temperature control, protecting the coffee from over-fermentation and mold. This meticulous process guarantees that every cup reflects the highest quality and craftsmanship.
