Sintayehu Mesele Yiregu adheres to rigid quality control protocols at his farm facility, where every step is executed with precision and care. Upon arrival, red cherries are carefully sorted to remove any under-ripe or overripe fruits before being pulped. The selected cherries are pulped within six hours of harvest and are subsequently dried on specially designed raised African beds, which facilitate optimal airflow for consistent drying. During this process, the cherries are regularly turned to prevent mould growth and fermentation. Once fully dried, the outer skin and remaining fruit flesh are mechanically removed, and the green coffee is allowed to "rest" before being prepared for export. The coffee undergoes hand-picking and is naturally processed over a span of 15 to 19 days, contingent on the prevailing weather conditions.

Hailing from Bensa in Sidama, a region renowned not only for its rich agricultural heritage, temperate climate, and fertile soils but also for its high-altitude terrain, Yiregu’s background is typical of many locals, most of whom cultivate coffee on their own small plots. This particular coffee is grown at an exceptional altitude of 2,450 meters above sea level, a factor that significantly contributes to its unique and remarkable characteristics. The cooler temperatures at such a high elevation slow the maturation of the cherries, allowing for a more complex and refined flavour profile. The Sidama region’s elevated altitudes, typically ranging between 1,500 and 2,200 meters above sea level, foster a distinct coffee that is celebrated for its brightness and depth. This combination of altitude, climate, and soil results in a truly exceptional and unique lot. Sidama’s natural forests, particularly the Ventricosum plant, known locally as "Enset" or false-banana—also play a vital role in sustaining the local food supply. This large, non-woody plant is integral to the community’s sustenance. Yiregu remains unwavering in his commitment to environmentally responsible farming practices, ensuring the use of natural materials and steering clear of pesticides and chemicals in the production of his crops.
