The average farm size in Ethiopia is 2.5 hectares, surpassing the average in Colombia. However, Ethiopia's planting density is considerably lower, as much of the coffee is grown in fully or semi-forested systems. This leads to fewer trees per hectare and significantly lower yields per tree, with the national average an astonishingly low 0.8 kg of cherry per tree per year.
This particular coffee originates from the Suke drying station, located in the hills of Shakiso, Guji. Suke sources cherries from approximately 35 smallholder farmers to produce Shoondhisa, which highlights heirloom varieties enhanced by sun-drying that allows the cherries to soak up their fruity pulp. The result is a cup filled with bright notes of ripe fruits, floral scents, and a sweet, wine-like finish.
