This coffee is sourced from indigenous growers in Aponte, Nariño, who are members of La Cooperativa de Cafés Especiales de Nariño. The producers contributing to this exceptional product cultivate coffee at altitudes exceeding 1,700 MASL, with farm sizes ranging from half a hectare to one and a half hectares. In Aponte, these growers have perfected the art of Honey processing, a skill they have refined over the past four years.

The cherries for this microlot were selectively harvested based on stringent ripeness criteria. After being pulped, they underwent 35 hours of dry fermentation. The cherries were then placed on raised beds for 11 days until the moisture content reached 10%.

The Aponte indigenous reserve is now recognised globally by roasters for its distinctive heritage. The community retains its own language, governance, and customs. Just a few decades ago, the area was under the control of guerrilla groups, forcing locals to cultivate illicit crops in a highly dangerous and inaccessible region. However, the community united to break free from the economic dependence on illegal production, replanting traditional crops such as vegetables and coffee, and successfully marketing their indigenous origin products.
