Introducing our latest offering from Ethiopia, sourced from the vibrant heart of the Guji Zone in the Uraga district. This exceptional lot hails from the village of Haro Wachu, a community founded 14 years ago by Bisrat Melaku. Nestled in the high-altitude regions near Mount Quto and the Seboba River, this area provides an ideal setting for cultivating high quality coffee.
This particular lot is meticulously sorted through by the growers through a series of steps, including defect removal, grading, and sun-drying on elevated African beds. The coffee beans are carefully shaded during the peak sun hours and regularly rotated to ensure uniform drying; a process that takes approximately 10-12 days until the beans reach an optimal moisture content of 11.5%
The African raised beds, a testament to their dedication to excellence, are expertly crafted to ensure optimal airflow and temperature control, protecting the coffee from over-fermentation and mold. This meticulous process guarantees that every cup reflects the highest quality and craftsmanship.
