Blue Moon Haze is produced by Sookoo Coffee, owned by Ture Waji, and grown by smallholders of Shoondhisa, a sub-kebele of Suke Quto in Shakiso, in Ethiopia's Guji zone. Gibirinna 74110 and Serto 74112 are dried as a natural at 2,000 to 2,150 MASL, giving champagne melon, blueberry and strawberry juice.
74110 and 74158 are JARC (Jimma Agricultural Research Center) selections of Ethiopian heirloom stock, released for disease resistance while preserving the classic floral, citrus character.
In the natural process, whole cherry is dried intact so the bean steeps in its own fruit. Done with discipline it builds heavy sweetness, body and pronounced berry character, with no shortcuts at the drying stage.
Ethiopia is the birthplace of Arabica, and its forests hold a genetic diversity found nowhere else. Smallholder gardens at extreme altitude give the floral, citric, tea-like cups the country is known for.
