Perennial Dream is produced by Teodoro Engelhardt at Finca La Bella, in Guatemala's Sierra de las Minas. Pacamara is dried as a natural at 1,450 to 1,650 MASL, giving sticky date, toffee apple and milk chocolate.
Pacamara is an El Salvadoran cross of Pacas and Maragogipe, bearing giant beans. It is known for bold, sometimes wild flavour, swinging between herbaceous and intensely fruited.
In the natural process, whole cherry is dried intact so the bean steeps in its own fruit. Done with discipline it builds heavy sweetness, body and pronounced berry character, with no shortcuts at the drying stage.
Guatemala's volcanic highlands and distinct growing regions produce coffees ranging from cocoa-rich to brightly floral, shaped by mineral soils and altitude.
