Finca San Isidro is owned and operated by Don Fabio Caballero, long regarded as one of the pioneers of high-quality coffee in Honduras. He is assisted in its management by his daughter Marysabel and her husband Moisés. In 2016 the family took first place at the Honduras Cup of Excellence, securing a record price of USD 120.50 per pound.
In recent years Don Fabio's grandson, Fabio Jr, has stepped into farm management and processing, carrying the family's work into its next generation. In 2025 he entered his first commercial harvest into the Cup of Excellence and took first place with a washed Geisha.
This lot is curated by Don Fabio himself. After harvest he dries the coffee in Guardiolas, mechanical drum dryers held at a low 40°C for 60 - 70 hours. With limited sunlight and high humidity through the harvest, conventional drying carries persistent risk. The Guardiolas hold a slow, even rate across the entire lot, guarding against mould and preserving the coffee's condition well beyond the season.
This is Geisha: the Ethiopian landrace held for its rarity, structure and distinct clarity. Grown at 1,800 metres at San Isidro and washed, the defining character of this low-yielding variety is left unaltered.
