Finca Plan del Hoyo rests within an ancient volcanic crater on the northern face of the Santa Ana massif. Acquired in 1953 by Francisco de Sola Maduro, the land moved through cattle and timber before coffee was introduced in 2015 under Francisco R.R. de Sola. What began as a late-stage agricultural pursuit has since evolved into one of El Salvador’s more deliberate varietal projects, placing in the 2023 Cup of Excellence and now operating alongside a research garden maintained in partnership with the University of Texas Borlaug Institute.
Presented as a dual offering, both the natural and washed expressions originate from the same enclosed volcanic site at 1,760 MASL. SL28, a Kenyan selection developed in the 1930s for structure and cup integrity, remains rare within El Salvador. Inside the crater’s protected environment, volcanic soil, altitude, and isolation converge into a singular expression of the cultivar.
The natural process broadens the profile. Hand-selected cherry is dried whole on raised African beds with no mechanical intervention through the drying phase. The cup moves darker and deeper. Saturated fruit. Dense sweetness. A heavier, more consuming structure.
The washed expression moves in the opposite direction. Cut back to precision. Acidity sharpens. Florals rise. Structure becomes exacting and transparent, exposing the varietal and terrain without obstruction.
Two offerings built from the same ground, separated only by process. One expansive. One restrained. Together, they reveal the full threshold of Plan del Hoyo’s SL28.
