Cerro San Luis Micromill operates from Grecia in Costa Rica’s West Valley. A family system, held and run by siblings Alexander and Magali Delgado with their partners. Farms and mill integrated. Separation maintained at plot level. Each parcel named. Each lot defined early.
In recent years, older plantings were removed. Replaced with a wider genetic range. SL28, Caturra, Bourbon variants, Catuai, Villa Sarchi, Maragogype. Selection not for volume. For control. For distinction in cup.
Processing is executed at the family home. Immediate intake. No delay. For this lot, a Yellow Honey protocol. Cherry depulped, mucilage retained in measured proportion. Initial drying on raised beds. Transitioned to covered patios. Turned consistently until stable. No deviation.
West Valley provides the frame. Elevation. Cooler conditions. Slower maturation. Sugar density built in fruit before harvest. A region repeatedly proven at the highest level.
SL28 is not native to this ground. A Kenyan selection. Introduced with intent. Chosen for structure, acidity, and definition. A deliberate move away from standardisation.
Finca Príncipe Azul is one of the family’s separated parcels. This lot is drawn from it directly. A microlot. Built through isolation, not aggregation.
