Produced by Slope Coffee, this lot is drawn from a Blang village in the Jingmai Mountain range of Xishuangbanna, Yunnan, at roughly 1,800 MASL. The elevation brings cooler temperatures and near-constant mist, slowing cherry maturation and allowing sugars to develop with restraint. Coffee is grown on terraced slopes beneath forest canopy rather than exposed fields, preserving soil health and tempering growth. The result is a cup of composure and ease, clean, light, and absent of bitterness, built for repetition rather than spectacle.
This washed Red Catimor presents a measured red apple acidity, biscotti-like sweetness, and a refined, high-grade green tea structure, carried with striking clarity and finishing clean and precise without weight.
Processing is deliberately orthodox and precise. Fully ripe cherries are hand selected, floated to remove defects, then pulped and fermented briefly to loosen mucilage before thorough washing. Drying is slow and controlled at low temperatures, fixing clarity and balance. The intent is simple and disciplined: to strip away excess and allow the inherent character of the coffee to speak without interference.
