VISIONS OF BLASPHEMY, Colombia

Finca Las Flores is a 16-hectare family-owned farm located between the municipalities of Pitalito and Acevedo in the Huila department of Colombia. The farm was established in 1990 by Edilberto Vergara and Nubia Ayure, who began cultivating traditional coffee varieties such as Caturra, Colombia, and Castillo. Over time, their pursuit of quality and resilience in the face of shifting agricultural realities led them to expand into more delicate and expressive cultivars including Pink Bourbon, Java, Tabi, Chiroso, Maracaturra, and Red Bourbon, grown across approximately 3 hectares of carefully maintained coffee plots.

Today, the farm is managed by the next generation of the Vergara family: Jhoan, Carlos, and Diego, who have reimagined Las Flores as a centre of experimentation and excellence in specialty coffee. In 2017, they began the shift from conventional coffee production toward highly differentiated, small-lot coffees. This decision, born from both vision and necessity, marked a turning point. Central to this transformation has been their exploration of post-harvest processing, applying meticulous methods that test the outer limits of flavour expression.

This particular lot is a Red Bourbon, cultivated at elevations as high as 1,900 MASL. It is the result of a washed process that involves a carefully calibrated microbial fermentation, subtle in execution but profound in effect. The specifics of this approach remain closely guarded, shaped by seasons of quiet refinement and disciplined trial. The resulting cup is marked by its layered elegance, vibrant acidity, and restrained fruit clarity, tones that whisper rather than shout.
