Love and Terror Laid the Stone is produced by Diego Baraona at Los Pirineos, in Tepaca Chimaneca, Usulutan, El Salvador. Pacamara is taken through a carbonic maceration natural at 1,650 to 1,800 MASL, giving orange, black cherry and dark chocolate.
Pacamara is an El Salvadoran cross of Pacas and Maragogipe, bearing giant beans. It is known for bold, sometimes wild flavour, swinging between herbaceous and intensely fruited.
In the natural process, whole cherry is dried intact so the bean steeps in its own fruit. Done with discipline it builds heavy sweetness, body and pronounced berry character, with no shortcuts at the drying stage.
El Salvador's coffee grows on volcanic slopes rich in Bourbon-family varieties, where altitude and mineral soil concentrate sweetness and balance.
