Symbolic Immortality comes from Wilton Benitez at Granja Paraiso 92, in Piendamo, Cauca, Colombia. A former chemical engineer, Benitez has become a leading figure in Colombian coffee, running a state-of-the-art processing plant and applying techniques such as terracing and drip irrigation across his family farms in Cauca and Risaralda. This lot is Tabi taken through an anaerobic natural at 1,650 MASL, building guava, passionfruit and strawberries and cream.
In the natural process, whole cherry is dried intact so the bean steeps in its own fruit. Done with discipline it builds heavy sweetness, body and pronounced berry character, with no shortcuts at the drying stage.
Colombia's combination of high Andean altitude, volcanic soil and two flowerings a year makes it one of the most consistent specialty origins on earth, with a deep bench of growers pushing varietal and process innovation.
