SUPREME VOID is the result of a collaboration among smallholder farmers hailing from the Al Mazab Village in Hayma Dhakiliya. Situated at an altitude of approximately 2,200 MASL, Al Mazab stands out from the surrounding region where the typical elevation reaches around 2,000 MASL.

What makes this coffee truly exceptional is that it belongs to the recently discovered Yemenia variety, a newfound gem made possible through the application of innovative genetic fingerprinting technology. This groundbreaking technique has enabled researchers to unveil the genetic makeup of coffee in Yemen, and the extensive study covered a vast area spanning over 25,000 square kilometers. Consequently, these findings are regarded as one of the most momentous genetic breakthroughs in Yemen's illustrious coffee history.

To further enhance its quality and flavour, this lot has undergone a meticulous and protracted fermentation process. Known as Deep Fermentation, this natural method involves a gradual drying of the coffee cherry over a period of 30 days. During this time, the layers of cherries are carefully doubled and diligently turned, fostering a semi-anaerobic environment attributing to the drying process.

This patient and attentive approach to fermentation not only adds depth and complexity to the coffee's flavour profile, but also exemplifies the dedication of the farmers in Al Mazab. Their commitment to producing a truly exceptional product is showcased through their adherence to this meticulous technique, resulting in a cup of coffee that encapsulates the essence of their expertise and craftsmanship.
